Instructions

  1. Prepare Potatoes: Wash and dry the potatoes thoroughly. You can leave the skins on for extra texture and fiber or peel them if you prefer. Using a mandoline or sharp knife, slice the potatoes into thin 1/8-inch rounds.
  2. Optional Soak: Soak the sliced potatoes in a bowl of cold water for 5-10 minutes to remove excess starch, which helps them crisp better. Drain and pat them dry completely with a clean kitchen towel or paper towels.
  3. Season the Slices: In a large mixing bowl, toss the potato slices with olive oil, salt, black pepper, garlic powder, paprika, and dried herbs until the slices are evenly coated with the seasoning mixture.
  4. Preheat Air Fryer: Preheat your air fryer to 400°F (204°C) for 2 minutes to ensure even cooking and crispness.
  5. Arrange in Basket: Place the seasoned potato slices in a single layer inside the air fryer basket. You can slightly overlap the slices if needed, but avoid overcrowding to allow hot air circulation.
