 - ¾ cup (150g), packed brown sugar
 - 2 large eggs
 - 1 teaspoon vanilla extract

- 1 ½ cups peeled and diced apples (about 2 medium apples)
 
Instructions
- Preheat the oven. Preheat your oven to 350°F (175°C) to prepare for baking the muffins.
 - Mix dry ingredients. In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt until well combined.
 - Combine wet ingredients. In another bowl, whisk together the Greek yogurt, brown sugar, eggs, and vanilla extract until the mixture is smooth and uniform.
 - Combine wet and dry mixtures. Pour the wet ingredients into the dry ingredients and gently fold them together. Then fold in the peeled and diced apples, ensuring they are evenly distributed without overmixing.
