Instructions

  1. Preheat oven. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Prepare apple filling. In a medium bowl, mix the diced apples with light brown sugar, ground cinnamon, and cornstarch until well combined. Set aside; you should have about 3½ cups of this mixture.
  3. Assemble egg rolls. Lay out egg roll wrappers on a clean work surface. Spread about 2 teaspoons of softened cream cheese onto the center of each wrapper, then add approximately 2 tablespoons of the apple mixture on top of the cream cheese.
  4. Wet wrapper edges. Use a little water to moisten the edges of each egg roll wrapper to help seal the rolls.
  5. Roll egg rolls. Fold up the bottom corner of the wrapper over the filling and roll once to enclose it. Next, fold in the left and right corners toward the center and press gently, adding more water as needed to seal the folds. Continue rolling until fully enclosed and press all edges firmly to seal.
  6. Prepare for baking. Place the rolled egg rolls on the prepared baking sheet. Spray or brush each with cooking oil to help them crisp up and brown evenly during baking.
  7. Bake egg rolls. Bake in the preheated oven for 15 to 17 minutes, flipping them halfway through, until they are golden brown and crispy on all sides.
  8. Prepare cinnamon sugar topping. While the egg rolls bake, combine the granulated sugar and ground cinnamon in a shallow plate or dish.
  9. Coat egg rolls. Immediately after baking, roll each hot egg roll in the cinnamon sugar mixture until fully coated to add a sweet and spicy finish.
  10. Serve with caramel sauce. Serve the warm apple pie egg rolls with warmed caramel topping on the side for dipping or drizzling.
