Description

This Asian Sticky BBQ Chuck Roast is a tender and flavorful slow-cooked beef dish infused with a rich, sweet, and savory Asian-inspired glaze. Slow-cooked to perfection, the chuck roast becomes juicy and easily falls apart, coated with a sticky and aromatic sauce made from soy sauce, hoisin, honey, and spices. Perfect for a hearty family meal or special occasion.

Ingredients

Scale

Meat

  • 34 pound chuck roast

Sauce

  • 1 cup soy sauce
  • 1/2 cup hoisin sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 3 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons sesame oil
  • 1 teaspoon chili flakes (optional for heat)

Thickener and Garnishes

  • 1 tablespoon cornstarch mixed with 1 tablespoon water (slurry)
  • 2 tablespoons sesame seeds, for garnishing
  • 3 green onions, thinly sliced, for garnishing

Instructions

  1. Prepare the meat: Place the chuck roast in a slow cooker or a large oven-safe pot, making sure it’s ready for the sauce.
  2. Mix the sauce: In a mixing bowl, combine soy sauce, hoisin sauce, honey, rice vinegar, brown sugar, minced garlic, minced ginger, sesame oil, and optional chili flakes. Stir well until the ingredients are thoroughly incorporated.
  3. Coat the roast: Pour the prepared sauce mixture over the chuck roast, ensuring the meat is well-covered on all sides.
  4. Cook the roast: For slow cooker method, set it to low heat and cook for 6-8 hours. For oven method, preheat oven to 325°F (160°C) and cook the roast in the covered pot for 3-4 hours or until the meat is tender and can be easily shredded with a fork.
  5. Rest the meat: Once cooked, carefully remove the chuck roast from the pot and place it on a serving dish. Cover with foil to keep it warm while you prepare the glaze.
  6. Simmer the sauce: Pour the remaining cooking sauce into a saucepan and bring it to a simmer over medium heat.
  7. Thicken the glaze: Slowly add the cornstarch slurry to the simmering sauce, stirring constantly until the sauce thickens into a sticky glaze, approximately 3-5 minutes.
  8. Glaze the roast: Pour the thickened glaze over the chuck roast, ensuring it’s evenly coated with the sticky sauce.
  9. Garnish and serve: Sprinkle sesame seeds and thinly sliced green onions over the roast for a fresh and crunchy finish. Serve warm and enjoy!
