Ingredients
Scale
Meat
- 3–4 pound chuck roast
Sauce
- 1 cup soy sauce
- 1/2 cup hoisin sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 3 tablespoons brown sugar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons sesame oil
- 1 teaspoon chili flakes (optional for heat)
Thickener and Garnishes
- 1 tablespoon cornstarch mixed with 1 tablespoon water (slurry)
- 2 tablespoons sesame seeds, for garnishing
- 3 green onions, thinly sliced, for garnishing
Instructions
- Prepare the meat: Place the chuck roast in a slow cooker or a large oven-safe pot, making sure it’s ready for the sauce.
- Mix the sauce: In a mixing bowl, combine soy sauce, hoisin sauce, honey, rice vinegar, brown sugar, minced garlic, minced ginger, sesame oil, and optional chili flakes. Stir well until the ingredients are thoroughly incorporated.
- Coat the roast: Pour the prepared sauce mixture over the chuck roast, ensuring the meat is well-covered on all sides.
- Cook the roast: For slow cooker method, set it to low heat and cook for 6-8 hours. For oven method, preheat oven to 325°F (160°C) and cook the roast in the covered pot for 3-4 hours or until the meat is tender and can be easily shredded with a fork.
- Rest the meat: Once cooked, carefully remove the chuck roast from the pot and place it on a serving dish. Cover with foil to keep it warm while you prepare the glaze.
- Simmer the sauce: Pour the remaining cooking sauce into a saucepan and bring it to a simmer over medium heat.
- Thicken the glaze: Slowly add the cornstarch slurry to the simmering sauce, stirring constantly until the sauce thickens into a sticky glaze, approximately 3-5 minutes.
- Glaze the roast: Pour the thickened glaze over the chuck roast, ensuring it’s evenly coated with the sticky sauce.
- Garnish and serve: Sprinkle sesame seeds and thinly sliced green onions over the roast for a fresh and crunchy finish. Serve warm and enjoy!
