Each bite delivers a crispy golden crust with a melty cheesy center and the savory kick of buffalo sauce, making them a crowd-pleasing appetizer or party treat.

Ingredients

Scale

Cheese and Bacon

  • 8 oz Mozzarella Cheese (cut into 1-inch cubes)
  • 6 slices Cooked Bacon (crumbled)

Chicken Mixture

  • 1 lb Ground Chicken (or substitute with ground turkey or lean beef)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Buffalo Sauce (adjust to spice preference)

Breading and Coating

  • 1 cup Plain Flour
  • 2 large Eggs (beaten)
  • 1 cup Breadcrumbs (Panko or regular for extra crunch)

For Cooking

  • 2 cups Vegetable Oil or Canola Oil (for frying)
  • Remaining 1/2 cup Buffalo Sauce (for drizzling)

Instructions

  1. Prepare the Mozzarella: Cut the mozzarella cheese into small cubes approximately one inch each and set aside.
  2. Wrap with Bacon: Crumble the cooked bacon into small bits. Take one piece of bacon crumbled and wrap it completely around each mozzarella cube to coat it thoroughly.
  3. Mix the Chicken Mixture: In a large bowl, combine ground chicken with garlic powder, onion powder, paprika, salt, black pepper, and half of the buffalo sauce. Mix well to evenly distribute the spices and sauce throughout the meat.
  4. Form the Bombs: Flatten a handful of the chicken mixture in your palm. Place a bacon-wrapped mozzarella cube in the center and carefully encase it by molding the chicken mixture around it, forming a tight ball to seal the cheese inside.
  5. Bread the Bombs: Roll each chicken ball first in plain flour until lightly coated, then dip into the beaten eggs, and finally roll in breadcrumbs to cover completely for a crispy crust.
  6. Cook the Bombs: Heat vegetable or canola oil to 350°F (175°C) if frying. Fry each bomb for 5-6 minutes until golden brown and cooked through. Alternatively, preheat the oven to 400°F (200°C) and bake the bombs on a prepared baking tray for 18-20 minutes until crispy.
  7. Serve: Drizzle the remaining buffalo sauce over the cooked bombs and serve hot for a spicy, cheesy treat perfect for game day or parties.

Notes

  • Substitute ground turkey or lean beef for chicken to vary flavors.
  • Use regular or panko breadcrumbs for a different crunch texture.
  • Adjust buffalo sauce amount to your preferred spice level.
  • Ensure the chicken is fully cooked to an internal temperature of 165°F (74°C) when frying or baking.
  • These bombs can be kept warm in a low oven and are best enjoyed fresh.
