Instructions
- Prepare Cheese and Herbs: Crumble the cold Cotswold cheese into small pieces in the bowl of a food processor. Add the chopped fresh rosemary and chives to the bowl.
- Add Dry Ingredients and Butter: Add the flour, salt, and cubed unsalted butter to the food processor bowl.
- Form the Dough: Pulse the food processor while gradually adding ice water one tablespoon at a time until the mixture forms a soft dough that holds together. You may not need all the water.
- Chill the Dough: Turn out the dough onto plastic wrap, shape it into a disk, wrap tightly, and refrigerate for 30 minutes to firm up.
- Preheat Oven and Prepare Baking Sheets: Preheat the oven to 400° F (200° C). Line two baking sheets with parchment paper or silicone mats.
- Roll and Cut Dough: On a floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut dough into desired shapes using a 2-inch round cookie cutter or your preferred shape.
- Transfer and Season: Use a thin spatula to transfer the cracker rounds onto the prepared baking sheets. Lightly sprinkle additional sea salt on top of each cracker.
- Bake: Bake in the preheated oven for 13-15 minutes or until the crackers are golden brown and crisp.
- Cool: Remove from oven and allow crackers to cool completely on the baking sheets to maintain crispness.
- Store: Once cooled, store the crackers in an airtight container. They will keep fresh for up to one week.
