Instructions

  1. Heat the Oil: Preheat about 2 inches of oil in a large stockpot over medium heat until it reaches 375°F (190°C). This ensures the egg rolls fry evenly and become crispy.
  2. Prepare the Cheesecake Filling: In the bowl of a stand mixer fitted with a paddle attachment, combine softened cream cheese, sugar, lemon juice, vanilla extract, and salt. Beat on high speed for 1 to 2 minutes, stopping occasionally to scrape down the sides, until smooth and creamy.
  3. Wrap the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the cheesecake filling onto the wrapper. Fold the bottom corner over the filling, then fold in both side corners toward the middle like an envelope. Moisten the top corner with water and roll tightly to seal. Place the prepared egg rolls on a plate. Repeat until all filling and wrappers are used.
