  • 1/2 cup Caesar dressing
  • 1/3 cup ranch dressing
  • 1 cup mayonnaise

Instructions

  1. Season the chicken: Liberally coat the diced chicken breasts or tenderloins on all sides with your chosen poultry seasoning like cajun or lemon pepper, ensuring even coverage for maximum flavor.
  2. Cook the bacon: In a skillet over medium-low heat, add the diced bacon and cook until crispy on both sides. Remove the bacon and place it on a paper towel-lined plate to absorb excess grease. Discard most of the bacon grease from the skillet, leaving just enough for flavor.
  3. Cook the chicken: Add 2 tablespoons of olive oil to the skillet. Cook the seasoned chicken over medium-low heat, about 3-4 minutes per side, until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  4. Cook the pasta: Bring a large pot of salted water to a boil. Add the short pasta (rotini or fusilli) and cook according to package instructions until al dente. Drain the pasta in a colander and rinse with cold water to stop the cooking process and cool it down.

For best texture, do not add the chopped romaine lettuce or croutons at this stage if you plan to keep leftovers, as the romaine may wilt and croutons can become soggy.
