Instructions
- Prepare chipotle mayo: In a small bowl, combine the chopped chipotle peppers in adobo sauce with the mayonnaise. Stir well until evenly mixed and set aside.
- Slice focaccia: Cut the flat loaves of focaccia bread into 4 pieces each, yielding 8 square pieces in total.
- Spread mayo: Evenly spread the prepared chipotle mayo on each slice of focaccia bread.
- Assemble sandwiches: On half of the bread slices, layer the sliced gouda cheese, avocado slices, shredded rotisserie chicken, chopped cilantro, and chopped Peppadew peppers.
