Description

These Cinnamon Sugar French Toast Muffins are a delightful twist on the classic breakfast favorite. Made with day-old bread soaked in a rich mixture of eggs, milk, cream, and warm spices, then baked to golden perfection, these bite-sized treats are perfect for breakfast, brunch, or a cozy snack. Topped with a buttery cinnamon sugar glaze, they offer a sweet, comforting flavor that everyone will love.

Ingredients

Scale

French Toast Muffin Batter

  • 4 cups day-old bread, cubed
  • 4 large eggs
  • 1 cup whole milk
  • ½ cup heavy cream
  • ¼ cup granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon

Topping

  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • 2 tbsp melted butter

Instructions

  1. Preheat oven and prepare muffin tin. Preheat your oven to 350°F (175°C) and grease or line a muffin tin to prevent sticking.
  2. Mix wet ingredients and spices. In a large bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, and ground cinnamon until well combined.
  3. Incorporate the bread cubes. Gently fold the cubed day-old bread into the egg mixture and allow it to soak for about 5 minutes so the bread absorbs the custard.
  4. Fill the muffin cups. Evenly distribute the soaked bread mixture into the prepared muffin cups and press down lightly to compact the mixture.
  5. Bake the muffins. Place the muffin tin in the preheated oven and bake for 25–30 minutes or until the muffins are golden brown on top and set in the center.
  6. Add the topping. Right after removing the muffins from the oven, brush each with melted butter and sprinkle generously with the cinnamon sugar mixture for a sweet, crunchy finish.
  7. Cool and serve. Allow the muffins to cool slightly before serving warm for the best texture and flavor experience.

Notes

  • Use day-old or slightly stale bread to ensure the muffins absorb the custard without becoming mushy.
  • You can substitute whole milk with a milk alternative if desired, though the texture may vary slightly.
  • Feel free to add raisins or chopped nuts to the batter for added texture and flavor.
  • These muffins can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to 4 days.
  • Reheat muffins gently in the microwave or oven before serving.
