Ingredients
Scale
Noodles
- 200 grams Udon Noodles (Cook according to package instructions)
Sauce
- 2 tablespoons Miso Paste (White for milder flavor or red for stronger)
- 2 tablespoons Soy Sauce (Low-sodium preferred)
- 1 tablespoon Sesame Oil (Can substitute with vegetable oil)
Vegetables and Garnish
- 1 cup Vegetables (e.g., bok choy, carrots; seasonal veggies can be substituted)
- 2 pieces Green Onions (Chives can be used as an alternative)
- 1 clove Garlic (minced)
Instructions
- Preparation: Cook the udon noodles according to the package instructions until al dente. Once cooked, drain the noodles and set them aside to be used later.
- Heat Oil and Sauté Garlic: In a large pan over medium heat, warm 1 tablespoon of sesame oil. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned.
- Mix Sauce Base: Stir in 2 tablespoons of miso paste and 2 tablespoons of soy sauce into the pan, mixing continuously until the mixture is smooth and well combined.
- Add Noodles: Add the cooked udon noodles to the pan. Pour in a splash of the reserved pasta water to help loosen the sauce and coat the noodles evenly.
- Toss Noodles: Toss the noodles gently until they are beautifully coated with the creamy miso sauce and have a glossy appearance.
- Add Vegetables: Stir in the chopped vegetables and cook them together with the noodles for 2-3 minutes, until the vegetables are just tender but still retain some crispness.
- Serve and Garnish: Divide the creamy miso udon between bowls and garnish generously with sliced green onions. Serve warm for the best comforting experience.
Notes
- Use white miso for a milder, sweeter flavor and red miso for a deeper, more robust taste.
- Reserve some noodle cooking water to adjust the sauce consistency as needed.
- Feel free to swap vegetables based on what is in season or available; mushrooms, snap peas, or bell peppers work well.
- Chives are a great garnish alternative to green onions for a different onion-like aroma.
- This dish is best served immediately but can be stored in the refrigerator for up to 2 days and reheated gently with a little water.
