Ingredients
Scale
Chicken and Marinade
- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice (from a jar of pickles)
Coating
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, whisked
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- salt and pepper, to taste
For Frying
- cooking oil, for frying
Instructions
- Marinate the Chicken: Place the chicken breasts in a shallow dish or a zip-top bag. Pour the dill pickle juice over the chicken ensuring it’s fully submerged. Refrigerate and marinate for at least 30 minutes and up to 2 hours to infuse flavor and tenderize the meat.
- Prepare the Coating Stations: In three separate shallow dishes, prepare the coatings: mix the flour with garlic powder, onion powder, paprika, salt, and pepper in the first dish; whisk the eggs in the second; and combine the seasoned breadcrumbs with grated Parmesan cheese in the third.
- Coat the Chicken: Remove the chicken from the pickle brine and pat each piece dry with paper towels. Dredge each breast first in the seasoned flour mixture, then dip into the whisked eggs, and finally coat thoroughly with the Parmesan and breadcrumb mixture, pressing gently to adhere.
- Fry the Chicken: Pour about 1/2 inch of cooking oil into a large skillet and heat over medium-high heat. Once hot, carefully add the coated chicken breasts. Fry each side for 5 to 7 minutes or until the coating is golden brown and crispy, and the internal temperature reaches 165°F (75°C) indicating it is cooked through.
- Drain and Serve: Transfer the fried chickens to a wire rack to drain excess oil and prevent sogginess. Let them rest for a few minutes to retain juiciness before serving hot for the best texture and flavor.
Notes
- Marinating chicken in dill pickle juice not only imparts flavor but also tenderizes the meat.
- Patting the chicken dry before coating helps ensure the coating sticks and crisps up well during frying.
- Use a thermometer to check doneness to avoid undercooking or overcooking the chicken.
- Drain on a wire rack instead of paper towels to keep the crust crispy.
- Adjust spice levels according to preference by adding cayenne or chili powder to the flour mixture if desired.
