Description

These Delicious Blueberry Swirl Yogurt Bites are a perfect guilt-free snack combining creamy Greek yogurt with a sweet and tangy blueberry swirl. Easy to make and freezer-friendly, they offer a refreshing treat for any time of day.

Ingredients

Scale

Yogurt Mixture

  • 2 cups Greek yogurt (full-fat for creaminess)
  • 3 tablespoons honey or maple syrup (adjust to taste)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon pure vanilla extract

Blueberry Swirl

  • 1 cup blueberries (fresh or thawed frozen)
  • 1 teaspoon cornstarch (optional; mix with water before using)

Instructions

  1. Preparation: Gather all your ingredients and allow them to come to room temperature. Set out an ice cube tray or silicone molds to prepare for filling.
  2. Mix Yogurt Base: In a mixing bowl, combine Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract. Stir thoroughly until the mixture is smooth and creamy.
  3. Cook Blueberries: In a small saucepan over medium heat, cook the blueberries for about 5-7 minutes until they release their juices and soften. If using cornstarch, mix it with a small amount of water first, then stir into the blueberry mixture to thicken.
  4. Cool Blueberry Mixture: Remove the blueberry mixture from heat and let it cool completely before using it as a swirl in the yogurt bites.
  5. Assemble Bites: Fill each mold halfway with the yogurt mixture, add a dollop of the cooled blueberry swirl on top, and then cover with more yogurt. Use a toothpick or skewer to gently swirl the blueberry mixture into the yogurt, creating a marbled effect.
  6. Freeze: Place the filled molds in the freezer for at least 3 hours or until the bites are completely solid.

Notes

  • For a sweeter taste, adjust honey or maple syrup according to preference.
  • Cornstarch is optional but helps to thicken the blueberry swirl, preventing it from mixing too much with the yogurt.
  • Use silicone molds or an ice cube tray for easy removal.
  • Let all ingredients come to room temperature to ensure smooth mixing and proper consistency.
  • Store frozen yogurt bites in an airtight container for up to 1 month.
