Instructions
- Preparation: Gather all your ingredients and allow them to come to room temperature. Set out an ice cube tray or silicone molds to prepare for filling.
- Mix Yogurt Base: In a mixing bowl, combine Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract. Stir thoroughly until the mixture is smooth and creamy.
- Cook Blueberries: In a small saucepan over medium heat, cook the blueberries for about 5-7 minutes until they release their juices and soften. If using cornstarch, mix it with a small amount of water first, then stir into the blueberry mixture to thicken.
- Cool Blueberry Mixture: Remove the blueberry mixture from heat and let it cool completely before using it as a swirl in the yogurt bites.
- Assemble Bites: Fill each mold halfway with the yogurt mixture, add a dollop of the cooled blueberry swirl on top, and then cover with more yogurt. Use a toothpick or skewer to gently swirl the blueberry mixture into the yogurt, creating a marbled effect.
- Freeze: Place the filled molds in the freezer for at least 3 hours or until the bites are completely solid.
