Description

This Deviled Egg Pasta Salad combines tender elbow macaroni, creamy deviled-egg inspired dressing, crispy bacon, and fresh green onions for a flavorful twist on classic pasta salad. Perfect for picnics, potlucks, or a quick weeknight side, it’s a creamy, tangy dish with a satisfying crunch.

Ingredients

Scale

Pasta

  • 2 cups elbow macaroni, cooked and cooled

Egg Mixture

  • 6 large hard-boiled eggs, chopped
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced

Dressing

  • 3/4 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Cook Pasta: Cook elbow macaroni according to package instructions until al dente. Drain and rinse with cold water to stop cooking, then let cool completely.
  2. Prepare Eggs: Peel and chop the hard-boiled eggs. Reserve a few slices for garnish if desired.
  3. Make Dressing: In a large bowl, whisk together mayonnaise, yellow mustard, apple cider vinegar, sugar, salt, black pepper, and paprika until smooth.
  4. Combine Ingredients: Add the cooled macaroni, chopped eggs, crumbled bacon, and sliced green onions into the bowl with the dressing. Stir gently to combine all ingredients thoroughly.
  5. Adjust Seasoning: Taste the salad and adjust the seasoning as needed, adding more salt, pepper, or paprika if desired.
  6. Chill: Cover the pasta salad and refrigerate for at least 1 hour to allow flavors to meld and the salad to chill thoroughly.
  7. Garnish and Serve: Just before serving, garnish with the reserved egg slices, additional green onion slices, and a dash of paprika for color and added flavor.
