Bean Layer

- ⅓ cup sliced green onions
Instructions
- Prepare Bean Layer: In a medium bowl, combine the refried beans, drained Rotel tomatoes and green chilies, and taco seasoning. Mix well until evenly incorporated. Spread this mixture evenly in the bottom of a 7 x 11-inch casserole dish to form the base layer.
- Make Guacamole Layer: In another bowl, mash the avocados thoroughly. Add the fresh lime juice, minced garlic, chopped cilantro, onion powder, salt, and ground cayenne pepper to the mashed avocado. Mix until smooth and well combined. Carefully spread this guacamole mixture over the bean layer in the casserole dish.
- Add Sour Cream Layer: Spoon the sour cream over the guacamole layer and gently spread to create an even, smooth layer without mixing with the layers underneath.
- Top With Cheese and Vegetables: Sprinkle the finely shredded cheddar and Monterey Jack cheese blend evenly over the sour cream layer. Follow with a layer of sliced black olives, diced cherry tomatoes, and sliced green onions spread uniformly on top.
