Beef and Marinade

- 1 tbsp oyster sauce

Garlic and Cooking
- 10 garlic cloves, sliced thinly
- ¼ cup neutral oil (avocado oil recommended)
- 2 tbsp cold butter

- Marinate the beef: Cut the ribeye steak into 1-inch cubes and marinate with Worcestershire sauce, soy sauce, oyster sauce, and black pepper for at least 10 minutes to allow the flavors to penetrate the meat.
- Prepare and fry the garlic: Thinly slice 10 garlic cloves. Heat ¼ cup of avocado oil in a pan over medium heat. Once the oil is hot, carefully add the sliced garlic. Fry the garlic slices until they turn golden brown and crispy, then remove them from the pan using a sieve and set aside, reserving the garlic-infused oil.
- Sear the beef: Add 2 tablespoons of the reserved garlic oil to the pan and increase the heat to high. Sear the marinated beef cubes for about 2 minutes on each side until they develop a beautiful brown crust.
- Finish cooking: After searing, add the remaining marinade to the pan along with 2 tablespoons of cold butter. Cook briefly, allowing the butter to melt and coat the beef, enhancing its richness.
- Serve: Just before serving, sprinkle the crispy fried garlic over the beef for added texture and flavor. Serve the salpicao hot with freshly steamed white rice, your favorite vegetables or salad, and garnish with green onions if desired.
