Ingredients

Scale

Main Ingredients

  • 1 lb lean ground beef (85/15)
  • 1 Tbsp olive oil
  • ½ tsp fine sea salt, or to taste
  • ¼ tsp black pepper, or to taste
  • ½ medium onion, finely diced
  • 1 medium carrot, julienned or coarsely grated
  • 3 garlic cloves, minced
  • 3 cups green cabbage, thinly sliced
  • 1 tsp ground ginger
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • ½ tsp granulated sugar

Optional Garnishes

  • 1 Tbsp chopped green onion
  • ¼ tsp sesame seeds

Instructions

  1. Cook the ground beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook for about 5 minutes, breaking it apart with a spatula, until browned and no longer pink. Season with salt and pepper to taste.
  2. Sauté vegetables: Add the diced onion and grated carrot to the skillet with the beef. Cook for 5–7 minutes, stirring occasionally, until the onion softens.
  3. Add garlic: Stir in the minced garlic and cook for an additional 30 seconds, stirring constantly to release the flavor without burning the garlic.
  4. Add cabbage and seasonings: Mix in the thinly sliced cabbage, ground ginger, low-sodium soy sauce, sesame oil, and granulated sugar. Continue to sauté for 5–7 minutes, or until the cabbage becomes tender and lightly wilted.
  5. Serve and garnish: Remove the skillet from heat. Garnish with chopped green onions and sesame seeds if desired. Serve warm and enjoy this flavorful, low-carb egg roll inspired bowl.
