  • Author: Naomi
  • Total Time: 25 minutes
  • Yield: 12 enoki beef rolls (serves 3-4) 1x

Description

Enoki Beef Rolls are a delightful Japanese-inspired dish featuring thinly sliced beef wrapped around tender enoki mushrooms, simmered in a savory dashi-based sauce with caramelized onions and finished with scrambled eggs. This hearty and flavorful recipe makes a perfect comforting meal served alongside steamed rice.

Ingredients

Scale

Main Ingredients

  • 12 slices thinly sliced beef
  • 1 pack enoki mushrooms (split into 12 pieces)
  • 1/2 small yellow onion (sliced)
  • 2 large eggs

Sauce Ingredients

  • 1 cup dashi broth
  • 2 tablespoons mirin
  • 3 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1/4 teaspoon black pepper

Garnish

  • 1 stalk green onion (diced)
  • 1 tablespoon sesame seeds

Additional

  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Prep the enoki beef rolls: Divide the enoki mushrooms into small bunches and carefully roll each bunch with one slice of thinly sliced beef to form individual rolls.
  2. Mix the sauce: In a small bowl, combine the dashi broth, mirin, soy sauce, sugar, and black pepper, stirring well to dissolve the sugar and blend the flavors.
  3. Cook the onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they turn slightly browned, caramelized, and translucent, about 3 to 5 minutes.
  4. Add the enoki beef rolls and sauce: Arrange the enoki beef rolls in a single layer on top of the caramelized onions. Pour the prepared sauce evenly over the beef rolls. Cover the skillet and cook for 3 minutes. Flip the beef rolls over gently and cook for an additional 1 to 2 minutes to fully cook the beef.
  5. Add the egg: In a mixing bowl, scramble the eggs lightly. Drizzle the scrambled eggs evenly over the enoki beef rolls in the skillet. Cover and simmer for about 2 minutes, or until the egg is fully cooked through.
  6. Serve: Garnish the cooked enoki beef rolls with diced green onion and sesame seeds. Serve hot with steamed rice alongside and enjoy your flavorful meal.

Notes

  • Be sure to use thinly sliced beef to make rolling easier and ensure quick cooking.
  • Dashi broth can be made from scratch or prepared using instant dashi powder diluted in water.
  • Adjust the sweetness of the sauce by adding more or less sugar according to your taste.
  • Covering the skillet while cooking helps the beef rolls cook evenly and the flavors to meld.
  • This dish pairs beautifully with steamed white rice or a simple side of vegetables.
