Ingredients
Scale
Main Ingredients
- 12 slices thinly sliced beef
- 1 pack enoki mushrooms (split into 12 pieces)
- 1/2 small yellow onion (sliced)
- 2 large eggs
Sauce Ingredients
- 1 cup dashi broth
- 2 tablespoons mirin
- 3 tablespoons soy sauce
- 1/2 tablespoon sugar
- 1/4 teaspoon black pepper
Garnish
- 1 stalk green onion (diced)
- 1 tablespoon sesame seeds
Additional
- 1 tablespoon olive oil (for cooking)
Instructions
- Prep the enoki beef rolls: Divide the enoki mushrooms into small bunches and carefully roll each bunch with one slice of thinly sliced beef to form individual rolls.
- Mix the sauce: In a small bowl, combine the dashi broth, mirin, soy sauce, sugar, and black pepper, stirring well to dissolve the sugar and blend the flavors.
- Cook the onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they turn slightly browned, caramelized, and translucent, about 3 to 5 minutes.
- Add the enoki beef rolls and sauce: Arrange the enoki beef rolls in a single layer on top of the caramelized onions. Pour the prepared sauce evenly over the beef rolls. Cover the skillet and cook for 3 minutes. Flip the beef rolls over gently and cook for an additional 1 to 2 minutes to fully cook the beef.
- Add the egg: In a mixing bowl, scramble the eggs lightly. Drizzle the scrambled eggs evenly over the enoki beef rolls in the skillet. Cover and simmer for about 2 minutes, or until the egg is fully cooked through.
- Serve: Garnish the cooked enoki beef rolls with diced green onion and sesame seeds. Serve hot with steamed rice alongside and enjoy your flavorful meal.
Notes
- Be sure to use thinly sliced beef to make rolling easier and ensure quick cooking.
- Dashi broth can be made from scratch or prepared using instant dashi powder diluted in water.
- Adjust the sweetness of the sauce by adding more or less sugar according to your taste.
- Covering the skillet while cooking helps the beef rolls cook evenly and the flavors to meld.
- This dish pairs beautifully with steamed white rice or a simple side of vegetables.
