Description

Firecracker Ground Chicken is a spicy and flavorful dish featuring ground chicken cooked to perfection and tossed in a tangy, sweet, and spicy homemade sauce. This quick skillet recipe combines chili oil, buffalo sauce, and warm spices for a satisfying meal perfect over rice or cauliflower rice.

Ingredients

Scale

Chicken

  • 1 lb Ground Chicken (92/8)
  • 1/2 Tbsp (8g) Chili Oil

Sauce

  • 1/2 C (96g) Swerve Brown Sugar
  • 1/4 C (60g) Buffalo Sauce
  • 2 Tbsp (30g) Cider or Rice Vinegar
  • 1 tsp Ground Ginger
  • 1 tsp Garlic Powder
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Red Pepper Flakes

Garnish (optional)

  • Chopped Scallions
  • Toasted Sesame Seeds

Instructions

  1. Heat the Skillet and Brown Chicken: Place a skillet over medium-high heat and add the chili oil. Brown both sides of the ground chicken patties or formed portions, cooking each side about 3-4 minutes to develop color before breaking it apart and continuing to cook through until fully done.
  2. Prepare the Sauce: While the chicken cooks, combine the Swerve brown sugar, buffalo sauce, cider or rice vinegar, ground ginger, garlic powder, kosher salt, black pepper, and red pepper flakes in a mixing bowl. Whisk thoroughly until well mixed.
  3. Cook Sauce with Chicken: Once the ground chicken is fully cooked, add the prepared sauce to the skillet. Cook together, stirring occasionally, until the sauce thickens and becomes syrupy, coating the chicken evenly.
  4. Serve: Spoon the firecracker chicken over rice or cauliflower rice. Garnish with chopped scallions and toasted sesame seeds for extra flavor and texture.

Notes

  • For a lower-carb option, serve over cauliflower rice instead of white rice.
  • If you prefer less heat, reduce or omit the red pepper flakes and use a milder buffalo sauce.
  • Make sure to cook the chicken thoroughly until no pink remains to ensure food safety.
  • Chili oil adds a nice depth of flavor, but can be substituted with another neutral oil if necessary.
  • Use Swerve brown sugar alternative for a lower-sugar version, or substitute with regular brown sugar if preferred.
