Instructions

  1. Preheat Oven and Prepare Baking Tray: Preheat your oven to 150°C (300°F) on a static setting and place a large baking tray inside to heat up while you prepare the dough.
  2. Combine Dry Ingredients and Oil: In a mixing bowl, combine the gram flour, salt, and half of the dried thyme. Add the extra virgin olive oil and use your fingertips to rub the oil into the flour mixture until it forms a crumbly dough.
  3. Add Water Gradually: Pour in half of the 65 mL of water to the crumbly dough and begin mixing, gradually adding more water as needed to bring the mixture together.
  4. Knead Dough: Knead the mixture until it forms a compact, pliable dough that is easy to handle and shape.
  5. Roll Out Dough: Place the dough between two sheets of baking paper and roll it out with a rolling pin until it is about 2 mm thick.
  6. Score Crackers: Use a long knife or a wheel cutter to mark the outlines of individual crackers carefully without cutting all the way through.
  7. Prick Dough: Gently poke the dough with the tines of a fork to create small holes that will allow steam to escape during baking, preventing blistering.
  8. Bake Crackers: Transfer the rolled and scored dough (with the bottom baking paper) onto the preheated baking tray. Bake for 20 minutes, rotating the tray halfway through to ensure even cooking.
  9. Cool and Crisp: Once baked, transfer the crackers onto a wire rack and allow them to cool completely so they crisp up nicely before serving.
