Description

This Gourmet Ciabatta Sandwich is a deliciously layered handheld meal featuring grilled chicken or turkey, fresh mozzarella or brie, roasted red bell peppers, arugula or baby spinach, and optional caramelized onions. The ciabatta bread can be toasted or grilled for a crispy exterior with a soft interior, making it an ideal gourmet lunch or light dinner option.

Ingredients

Scale

Sandwich Ingredients

  • 1 large ciabatta loaf, or 2 ciabatta rolls
  • 6 oz grilled chicken breast or thinly sliced turkey
  • 2 slices fresh mozzarella or brie cheese
  • ½ cup roasted red bell peppers, sliced
  • ½ cup arugula or baby spinach
  • ¼ cup caramelized onions (optional)
  • 2 tbsp balsamic glaze or pesto spread
  • 2 tbsp garlic aioli or mayonnaise
  • 1 tbsp olive oil (for toasting, optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Prepare the Ciabatta Bread: Slice the ciabatta loaf in half and then into sandwich-sized pieces, or slice open individual rolls. Lightly brush the inside of the bread pieces with olive oil if toasting or grilling to enhance flavor and achieve crispiness.
  2. Toast or Grill the Bread (Optional): Lightly toast the ciabatta in a skillet or grill pan over medium heat, pressing gently with a spatula for even crispiness. Alternatively, toast in a toaster oven at 375°F for 3–4 minutes until the exterior is slightly crunchy and the interior remains soft.
  3. Spread the Sauces: Spread a generous layer of garlic aioli or mayonnaise on one side of the toasted bread. On the other half, drizzle or spread balsamic glaze or pesto for moisture and flavor depth.
  4. Layer the Protein and Cheese: Place the grilled chicken slices or turkey on the bottom half of the sandwich. Top with fresh mozzarella or brie cheese. For a melted cheese effect, heat the sandwich open-faced under a broiler for 1–2 minutes.
  5. Add the Vegetables: Layer roasted red bell peppers over the protein and cheese, followed by fresh arugula or baby spinach. If desired, add caramelized onions evenly for added sweetness.
  6. Assemble and Serve: Place the top half of the ciabatta over the layered ingredients. Secure with toothpicks if needed, slice in half, and serve immediately for best freshness.

Notes

  • To customize, swap grilled chicken with turkey or use your preferred cheese variety.
  • Caramelized onions add a sweet depth but can be omitted for a lighter sandwich.
  • The toasting step is optional but recommended for added texture and flavor.
  • Use airtight storage if preparing in advance, but the sandwich is best eaten fresh.
  • Adjust spreads and seasoning amounts to suit taste preferences.
