  • 2 tbsp parsley, chopped
  • 3/4 cup crumbled feta (e.g., Athenos Crumbled Feta)
  • 1 tbsp lemon juice
  • Salt, to taste
  • Pepper, to taste

For the Assembly:

  • 8 pitas
  • 1/2 cup tzatziki sauce

Instructions

  1. Prepare the Marinade and Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes until well combined.   2. Make the Mediterranean Salsa: While the chicken marinates, combine diced cucumbers, diced and seeded tomatoes, diced bell pepper, finely chopped red onion, and chopped parsley in a bowl.   3. Sear the Marinated Chicken: Heat a large skillet over medium-high heat until hot and shimmering. Carefully place the marinated chicken in a single layer, avoiding crowding the pan, allowing excess marinade to drip off. Cook without moving for 3 to 5 minutes until golden brown, then flip and cook another 3 to 4 minutes until cooked through, reaching an internal temperature of 165°F. Remove from heat and let rest briefly.
  4. Warm the Pitas and Assemble the Tacos: Warm pitas by placing directly over a gas flame, or in a dry skillet for about 30 seconds per side, or wrapped in foil in a 350°F oven for 5 minutes. Once warm, fill each pita with a generous portion of the cooked chicken, top with the Mediterranean salsa, and drizzle with creamy tzatziki sauce. Serve immediately.

  • Do not overcook the chicken to avoid dryness; remove from heat at 155°F and let rest to reach 165°F target.
