Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2–3 garlic cloves (minced)
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp soy sauce (low sodium)
- 1–2 Tbsp sriracha
- 2–3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (more or less to taste)
- 2 tsp corn starch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½–1 Tbsp sriracha (adjust to desired spice level)
- 1 tsp rice vinegar
- 2 tsp honey
Bowl Toppings
- Rice
- Shredded carrots
- Sliced cucumbers
- Shelled edamame
- Pickled onions
- Avocado
- Shredded cabbage
- Sliced green onion
- Sesame seeds
Instructions
- Prep Bang Bang Sauce: Add all of the bang bang sauce ingredients (mayonnaise, sweet chili sauce, sriracha, rice vinegar, honey) to a small bowl. Whisk well to combine until smooth and creamy. Adjust the flavor by adding more sriracha for extra spice or more honey or sweet chili sauce to tone down the heat. Chill the sauce until ready to serve.
- Cook Ground Turkey: Heat a large skillet over medium-high heat and add a drizzle of sesame oil. Once shimmering, add the ground turkey, breaking it into smaller pieces with a spatula. Cook until the turkey is fully browned and no longer pink, reaching an internal temperature of 165°F.
- Add Flavorings: Lower the heat to medium-low and stir in the minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer the mixture gently while stirring occasionally to meld the flavors, about 2-3 minutes.
- Thicken the Mixture: Sprinkle the cornstarch over the turkey mixture and stir thoroughly to combine. This will thicken the sauce, making it glossy and cling to the meat. Optionally, stir in about 2 tablespoons of the prepared bang bang sauce into the cooked turkey for added flavor just before serving.
- Assemble Rice Bowls: Prepare bowls with a base of rice and layer with your favorite fresh vegetables such as shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, and shredded cabbage. Spoon the ground turkey mixture over the top, drizzle generously with bang bang sauce, and garnish with sliced green onions and sesame seeds to finish.

- For a milder version, reduce or omit the sriracha in both the turkey mixture and the bang bang sauce.
- Use low sodium soy sauce to control salt levels.
- Chicken broth adds moisture and flavor; vegetable broth works as a vegetarian alternative.
