Description

This Hawaiian BBQ Pork Walking Taco is a fun and flavorful handheld meal perfect for parties or casual get-togethers. Featuring tender Byron’s Pork BBQ layered over crunchy chips and topped with shredded cheddar cheese, fresh lettuce, pineapple salsa, sour cream, and cilantro, it’s a delicious fusion of savory and sweet with a tropical twist.

Ingredients

Scale

Main Ingredients

  • 4 lbs Byron’s Pork BBQ
  • 24 1 ounce bags of chips
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded lettuce
  • ½ cup chopped cilantro
  • ½ cup sour cream
  • 1 ½ cups pineapple salsa

Instructions

  1. Heat the Pork BBQ: Warm the Byron’s Pork BBQ following the package instructions until it is hot and ready to serve.
  2. Prepare the Chips: Open each 1-ounce bag of chips and gently crush the chips inside into smaller pieces to create a sturdier base for the toppings.
  3. Fortify the Bag: Fold down the sides of the chip bags to make them more stable and easier to hold while eating.
  4. Assemble the Walking Taco: Top the crushed chips in each bag with a generous portion of the heated pork BBQ, followed by shredded cheddar cheese, shredded lettuce, pineapple salsa, sour cream, and finish with a sprinkle of chopped cilantro.

Notes

  • To keep the walking tacos fresh, assemble just before serving.
  • You can substitute the pork BBQ with grilled chicken or beef if desired.
  • If pineapple salsa is unavailable, diced fresh pineapple with chopped red onion and jalapeño makes a great alternative.
  • Use gluten-free chips to make this recipe gluten-free.
