Soaking Ingredients
- 1 cup rolled oats
- 1 cup warm milk (240 ml)
Yeast Mixture
- 2 teaspoons active dry yeast
- 1/4 cup warm water (60 ml)
- 1 tablespoon honey (for yeast activation)
Dough Ingredients
- 1/4 cup honey (60 ml)
- 1/4 cup melted butter (60 ml)
- 3 cups all-purpose flour (375 g)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Soften the oats: In a small bowl, combine 1 cup of rolled oats with 1 cup (240 ml) of warm milk. Let this mixture sit for about 10 minutes to soften the oats adequately.
- Activate the yeast: In a separate bowl, dissolve 2 teaspoons of active dry yeast in 1/4 cup (60 ml) of warm water. Add 1 tablespoon of honey to feed the yeast and let it sit for 5-10 minutes until the mixture becomes bubbly and frothy, indicating the yeast is active.
- Mix wet ingredients: Add the softened oats, 1/4 cup (60 ml) of melted butter, and 1/4 cup (60 ml) of honey to the yeast mixture. Stir everything together until combined thoroughly.
- Form the dough: Gradually mix in 3 cups (375 g) of all-purpose flour, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of salt. Stir until you get a shaggy dough that starts to come together.
- Knead the dough: Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes. Knead until the dough is smooth and elastic. If the dough is sticky, add flour a tablespoon at a time until manageable.
- First rise: Place the kneaded dough into an oiled bowl. Cover it with a damp cloth and let it rise in a warm place for 1 to 1.5 hours, or until the dough has doubled in size.
- Shape and second rise: Gently punch down the dough to release any air pockets. Shape the dough into a loaf shape and place it in a greased loaf pan. Allow it to rise again for 30-40 minutes until puffed up.
- Bake the bread: Preheat your oven to 375°F (190°C). Bake the loaf for 30-35 minutes, or until the crust turns a golden brown color and the bread sounds hollow when tapped on the bottom.
- Cool and serve: Remove the baked bread from the pan and transfer it to a wire rack. Let it cool completely before slicing to ensure the best texture and flavor.
Notes
- Ensure the milk and water are warm but not hot to avoid killing the yeast.
- The dough might be slightly sticky; adding flour gradually during kneading helps maintain softness.
- For extra flavor, sprinkle some rolled oats on top of the loaf before baking.
- Store the bread in an airtight container to keep it fresh for up to 3 days or freeze for longer storage.
- This bread freezes well; slice before freezing for easy toasting later.
