Dough Ingredients

  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Soften the oats: In a small bowl, combine 1 cup of rolled oats with 1 cup (240 ml) of warm milk. Let this mixture sit for about 10 minutes to soften the oats adequately.
  2. Activate the yeast: In a separate bowl, dissolve 2 teaspoons of active dry yeast in 1/4 cup (60 ml) of warm water. Add 1 tablespoon of honey to feed the yeast and let it sit for 5-10 minutes until the mixture becomes bubbly and frothy, indicating the yeast is active.
  3. Mix wet ingredients: Add the softened oats, 1/4 cup (60 ml) of melted butter, and 1/4 cup (60 ml) of honey to the yeast mixture. Stir everything together until combined thoroughly.
  4. Form the dough: Gradually mix in 3 cups (375 g) of all-purpose flour, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of salt. Stir until you get a shaggy dough that starts to come together.
  5. Knead the dough: Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes. Knead until the dough is smooth and elastic. If the dough is sticky, add flour a tablespoon at a time until manageable.
  6. First rise: Place the kneaded dough into an oiled bowl. Cover it with a damp cloth and let it rise in a warm place for 1 to 1.5 hours, or until the dough has doubled in size.
