Description

This Low Carb Broccoli Salad is a fresh, crunchy, and creamy dish perfect for a quick and healthy meal or side. Packed with broccoli, cauliflower, bacon, and Colby Jack cheese, it offers a delightful combination of textures and flavors with a tangy, slightly sweet yogurt-based dressing.

Ingredients

Scale

Dressing

  • 3/4 cup plain Greek yogurt
  • 1/2 cup mayonnaise
  • 1/2 cup clover honey
  • 2 tablespoons red wine vinegar
  • 1 tablespoon granulated sugar (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Salad

  • 4 cups broccoli florets (chopped)
  • 4 cups cauliflower florets (chopped)
  • 12 slices bacon (cooked and crumbled)
  • 8 ounces Colby Jack cheese (cut into small cubes)
  • 1 red onion (peeled and chopped)

Instructions

  1. Prepare the Dressing: In a medium mixing bowl, whisk together the Greek yogurt, mayonnaise, clover honey, red wine vinegar, granulated sugar (if using), salt, and black pepper until fully combined. Cover and refrigerate to let the flavors meld while you prepare the salad ingredients.
  2. Combine Salad Ingredients: In a large mixing bowl, add the chopped broccoli florets, cauliflower florets, half of the cooked and crumbled bacon, Colby Jack cheese cubes, and chopped red onion. Mix gently to combine the ingredients evenly.
  3. Add Dressing and Toss: Pour the chilled dressing over the broccoli mixture and toss everything carefully to coat all ingredients thoroughly with the dressing. Ensure an even distribution for balanced flavor in every bite.
  4. Top with Remaining Bacon and Serve: Sprinkle the remaining bacon crumbles over the top of the salad as a garnish and serve immediately for the best texture and taste.

Notes

  • For a lower sugar option, omit the granulated sugar in the dressing or substitute with a sugar alternative.
  • Make sure the bacon is cooked crispy to add a nice crunch and flavor contrast to the salad.
  • This salad can be prepared a few hours in advance but is best served fresh to maintain the crispness of the vegetables.
  • Feel free to swap Colby Jack cheese with cheddar or your favorite cheese for variation.
  • Storing leftovers in an airtight container in the refrigerator is recommended, but the salad may soften over time.
