Description

Maple Roasted Carrots with Hazelnuts & Goat Cheese is a flavorful and simple side dish featuring tender roasted carrots glazed with sweet maple syrup, topped with creamy goat cheese, crunchy toasted hazelnuts, and fresh herbs. Perfect for adding a touch of elegance to any meal.

Ingredients

Scale

Vegetables

  • 2 pounds carrots, peeled and sliced in half lengthwise

Seasonings & Oils

  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • kosher salt and pepper, to taste

Toppings

  • ½ cup toasted hazelnuts, chopped
  • 2 to 3 ounces goat cheese, crumbled
  • ¼ cup chopped fresh herbs, such as rosemary, thyme, parsley, and chives

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the carrots.
  2. Prepare Carrots: Peel the carrots, and if they are large, slice them in half lengthwise. Otherwise, leave them whole. Arrange the carrots on a baking sheet.
  3. Season Carrots: Drizzle the carrots with maple syrup and olive oil. Season generously with kosher salt and freshly ground black pepper.
  4. Roast Carrots: Place the baking sheet in the oven and roast the carrots for 20 to 25 minutes until they become fork-tender and caramelized.
  5. Toast Hazelnuts: While the carrots roast, heat a skillet over medium heat. Add the hazelnuts and toast, stirring frequently for 5 to 10 minutes until fragrant. Transfer them to a baking sheet and rub with a towel to remove the papery skins.
  6. Assemble the Dish: Once the carrots are roasted, immediately sprinkle the crumbled goat cheese, toasted hazelnuts, and chopped fresh herbs on top.
  7. Serve: Serve the maple roasted carrots warm as a delicious and elegant side dish.

Notes

  • You can leave the carrots whole if they are small for a more rustic presentation.
  • Fresh herbs can be varied according to preference; rosemary and thyme add an earthy note, while parsley and chives bring brightness.
  • Skins on toasted hazelnuts add texture but can be removed by rubbing with a towel after toasting for a smoother finish.
  • Use goat cheese at room temperature for easier crumbling and creamier texture.
