  • 3 teaspoons garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 cup parmesan cheese, finely shredded
  • 2 cups baby spinach, chopped

Instructions

  2. Cook the chicken. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Prepare the sauce. Reduce heat to medium-low and melt 2 tablespoons butter in the same skillet. Add the minced garlic and sliced sun-dried tomatoes; sauté for about 30 seconds until fragrant. Stir in 1 cup low-sodium chicken broth, 2 cups heavy cream, 1 teaspoon Italian seasoning, 1 teaspoon black pepper, and 1 teaspoon paprika. Whisk constantly until the sauce begins to bubble gently. Gradually whisk in 1 cup finely shredded parmesan cheese until fully melted and smooth.
  4. Combine ingredients. Add the cooked chicken back to the skillet, then add 2 cups chopped baby spinach and the entire 19 oz bag of frozen cheese tortellini. Stir gently to combine. Cook for about 5 minutes, stirring occasionally, until the spinach wilts and the tortellini is heated through.
