  • 1 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, pressed
  • ½ cup fresh basil leaves

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon white vinegar
  • Salt and pepper, to taste

Instructions

  1. Prepare the Tofu: Drain the tofu thoroughly and cut it into bite-sized cubes. Toss the cubes in a mixing bowl with cornstarch, salt, and pepper until evenly coated to help achieve a crispy texture when cooked.
  2. Cook the Tofu: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the coated tofu cubes and cook for 8 to 10 minutes, turning occasionally to brown all sides evenly. About a minute before finishing, sprinkle smoked paprika, oregano, and red pepper flakes, frying the tofu to infuse the spices. Remove from heat and set aside.
  3. Combine Salad Ingredients: In a large bowl, mix the drained white beans, chopped sun-dried tomatoes, pressed garlic, and fresh basil leaves until well combined.
  4. Make the Dressing: In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of white vinegar, salt, and pepper to create a light and tangy dressing.
  5. Toss the Salad: Pour the dressing over the bean mixture and gently stir to coat all ingredients evenly for balanced flavor.
