Instructions
- Prepare vegetables: Heat olive oil in a large pan over medium-high heat. Add diced red bell pepper and halved cherry tomatoes. Sauté for 4–5 minutes until the vegetables soften and release their flavors.
- Add garlic: Stir in minced garlic and cook for an additional minute to infuse the oil and vegetables with its aromatic flavor.
- Cook spinach and green onions: Add the baby spinach and the white parts of the sliced green onions to the pan. Stir until the spinach wilts, then remove the vegetable mixture from the pan and set aside to keep warm.
- Brown the ground beef: In the same pan, add the ground beef along with dried oregano, salt, and freshly ground black pepper. Cook until the beef is browned thoroughly, breaking it up with a spatula. Drain any excess grease if necessary.
- Combine with vegetables: Return the cooked vegetables to the pan with the beef. Add the green portions of the sliced green onions and stir to combine all ingredients. Cook for another minute to blend the flavors.
- Serve: Garnish the stir fry with crumbled feta cheese if using, and serve hot for a delicious Mediterranean-inspired meal.
