Ingredients

Scale

Chicken

  • lb chicken breast (about 34 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning if plain)
  • ½ tsp cracked pepper
  • ½¾ tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite-sized pieces (quarter small potatoes or cut larger into 6ths or 8ths)
  • 12 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the vegetables and chicken evenly and to achieve a crispy crust on the chicken.
  2. Prepare and Roast Potatoes: Line a sheet pan with parchment paper or spray with cooking oil for easy cleanup. In a medium bowl, combine the cut red potatoes, minced garlic, olive oil, grated parmesan, salt, and pepper. Toss to evenly coat all pieces, then spread the potatoes over one-third of the sheet pan. Roast in the oven for 10-15 minutes until they start to brown and soften.
  3. Prepare Chicken and Add to Pan: While the potatoes roast, toss the chicken breasts in the same medium bowl with olive oil, minced garlic, grated parmesan, breadcrumbs, cracked pepper, and sea salt, coating each piece thoroughly. Remove the sheet pan from the oven and arrange the chicken on another third of the pan alongside the potatoes.
  4. Prepare Green Beans and Add to Pan: In the same bowl, toss the trimmed green beans with olive oil, minced garlic, parmesan if using, and season with salt and pepper. Add the green beans to the last third of the sheet pan alongside the chicken and potatoes.
  5. Bake All Together: Return the sheet pan to the oven and bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes and green beans are tender.
  6. Optional Broil for Crispiness: For extra crispy potatoes, switch the oven to broil on high and broil everything on the sheet pan for 4-5 minutes watch carefully to avoid burning.
  7. Rest and Serve: Remove the pan from the oven and allow the chicken and vegetables to rest for several minutes before serving. Enjoy your easy Parmesan Crusted Chicken Sheet Pan Dinner!

Notes

  • Use parchment paper or spray the sheet pan with oil to prevent sticking and make cleanup easier.
  • Adjust the amount of salt according to your taste preference and dietary needs.
  • For even cooking, try to cut the potatoes in uniform sizes.
  • If you prefer, you can substitute green beans for another vegetable like asparagus or broccoli.
  • To ensure the chicken is cooked through, use a meat thermometer to check for an internal temperature of 165°F (74°C).
