- 2 tablespoons butter (for greasing pan)
Caramel Coating
- 1 package (14 ounces) caramels (unwrapped)
- 2 tablespoons water

Instructions
- Prepare your dish: Generously butter your pan and set it aside for the nougat mixture later to prevent sticking.
- Mix dry ingredients: In a bowl, combine the powdered sugar and nonfat dry milk powder thoroughly.
- Cook nougat base: In a medium saucepan, combine the softened butter, granulated sugar, and light corn syrup. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture comes to a boil.
- Add dry mix to syrup: Slowly stir the powdered sugar and milk powder mixture into the boiling syrup. Keep stirring until the mixture pulls away from the sides of the pan and forms a thick paste.
- Finish nougat: Remove from heat and stir in vanilla extract. Immediately pour the nougat into the prepared buttered pan and let it cool slightly; it should be warm but able to be handled.
- Shape nougat balls: Once cool enough to touch, place parchment paper on a baking sheet. Using lightly greased hands, scoop and roll the nougat into smooth 1/2 inch-sized balls. Cover with foil or plastic wrap to keep moist.
- Prepare caramel coating: In a microwave-safe bowl, combine the unwrapped caramels and water. Microwave in 30-second intervals, stirring after each, until melted and smooth.
- Dip truffles: Dip each nougat ball into the melted caramel, allow excess caramel to drain off, then place them on parchment paper.
- Add pecan topping: Immediately roll or sprinkle the coated truffles with toasted chopped pecans or pecan halves to taste.
