  • Author: Naomi
  • Total Time: 10 minutes
  • Yield: 2 servings 1x

Description

The Pineapple Paradise Cocktail is a refreshing tropical drink combining fresh pineapple juice, creamy coconut, zesty lime, and a splash of rum for an easy-to-make, fruity cocktail perfect for summer afternoons or any occasion where you want a taste of paradise.

Ingredients

Scale

Liquids

  • 2 cups fresh pineapple juice
  • ½ cup coconut cream
  • ¼ cup fresh lime juice
  • ½ cup white rum (optional for a mocktail)
  • 1 tbsp simple syrup (adjust to taste)

Other Ingredients

  • 1 cup ice cubes
  • Pineapple slices (for garnish)
  • Maraschino cherries (for garnish)
  • Toasted coconut flakes (optional for rim)

Instructions

  1. Rim the Glass with Toasted Coconut (Optional): Rub a lime wedge around the rim of your glass, then dip it into toasted coconut flakes to add a tropical decorative touch.
  2. Add Ice to the Shaker: Fill a cocktail shaker about halfway with ice cubes to chill the drink properly during mixing.
  3. Pour in the Liquids: Combine pineapple juice, coconut cream, fresh lime juice, white rum, and simple syrup into the shaker.
  4. Shake It Up! Seal the shaker and shake vigorously for 15-20 seconds until the mixture is well blended and chilled.
  5. Strain & Pour: Strain the cocktail into a chilled glass, leaving the ice and any pulp behind for a smooth drink.
  6. Garnish & Serve: Decorate with a pineapple slice, maraschino cherry, and sprinkle a little toasted coconut on top to complete the presentation.

Notes

  • Use fresh pineapple juice for the best authentic tropical flavor.
  • Chill your glasses beforehand to keep the drink extra refreshing for longer.
  • Blend all ingredients for a creamy frozen variation instead of shaking.
  • Make a mocktail version by omitting rum and replacing it with pineapple juice or coconut water.
  • Rim glasses with toasted coconut for an elegant, tropical appearance.
  • No coconut cream? Substitute with coconut milk for a lighter texture.
  • Add dark rum for a stronger, deeper flavor profile.
  • Sweeten with honey instead of simple syrup for a natural twist.
  • Add orange juice for extra citrus brightness.
  • Prepare the mixture in advance (without ice) and refrigerate up to one day; shake before serving.
  • Freeze pineapple juice into ice cubes to chill without diluting the drink.
  • Freeze leftover cocktail into popsicle molds for a fun frozen treat option.
