Ingredients
Scale
For the Pasta:
- 12 ounces pasta (such as spaghetti, penne, or fusilli)
- 2 cups cherry tomatoes, halved
- 3 tablespoons olive oil, divided
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning (optional)
- 2 cloves garlic, minced
- 8 ounces burrata cheese
- Fresh basil leaves, for garnish
- Parmesan cheese, for serving (optional)
Instructions
- Preheat Oven and Roast Tomatoes: Preheat your oven to 400°F (200°C). On a baking sheet, toss the halved cherry tomatoes with 2 tablespoons of olive oil, salt, pepper, and Italian seasoning if using. Roast for 20-25 minutes until blistered and caramelized. Add minced garlic in the last 5 minutes of roasting to infuse flavor.
- Cook the Pasta: While tomatoes roast, bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve half a cup of pasta water before draining the pasta.
- Combine Pasta and Roasted Tomatoes: In a large bowl, toss the drained pasta with the roasted tomatoes and their juices from the baking sheet. Add the remaining tablespoon of olive oil and mix well. If the pasta seems dry, gradually add reserved pasta water until the desired creaminess is achieved.
- Add Burrata Cheese: Tear the burrata into pieces and gently fold it into the pasta, allowing it to soften slightly and coat the noodles in creamy richness.
- Serve and Garnish: Plate the pasta warm, garnished with fresh basil leaves and optional grated Parmesan cheese for extra flavor. Enjoy immediately for best taste and texture.
Notes
- You can use your favorite pasta shape; just adjust cooking time accordingly.
- If Italian seasoning is unavailable, dried oregano and basil work well as a substitute.
- Reserve some pasta water to loosen the sauce as needed for a silky texture.
- For a vegan alternative, substitute burrata with a plant-based cheese and omit Parmesan.
- Serve immediately for the best flavor and texture as the burrata melts into the pasta.
