Ingredients
Scale
Meatballs
- 1 pound ground beef (or half ground pork + half ground beef)
- 1/2 cup almond flour (*see notes for nut-free)
- 1 large egg (*see notes for egg-free)
- 1 tablespoon fresh minced garlic
- 1 tablespoon coconut aminos
- 1 tablespoon dried minced onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Gravy
- 1 1/2 teaspoons olive oil (or avocado oil)
- 1/4 medium yellow onion (thinly sliced)
- 1 1/2 cup beef broth (or beef bone broth)
- 1 1/2 tablespoon arrowroot or potato starch
- 1 tablespoon coconut aminos
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat Oven or Air Fryer: If using the oven, set it to broil on high and prepare a rimmed baking sheet with foil and a rack. For air frying, preheat the air fryer to 375 degrees F.
- Mix Meatball Ingredients: In a medium bowl, combine ground meat, almond flour, egg, minced garlic, coconut aminos, dried minced onion, salt, and pepper. Mix gently to avoid overworking the meat.
- Shape Meatballs: Form the mixture into 20 equal 1-tablespoon meatballs, using a cookie scoop if desired to keep sizes consistent.
- Cook Meatballs (Oven): Place meatballs on prepared baking rack or foil-lined sheet spaced 1 inch apart. Broil for 10 minutes until browned, flip, then broil for another 3 minutes until cooked through.
- Cook Meatballs (Air Fryer): Arrange meatballs in a single layer inside the air fryer basket. Cook at 375°F for 8-10 minutes, working in batches if necessary, until browned and fully cooked.
- Prepare Gravy Base: Heat oil in a medium saucepan over medium heat. Add thinly sliced onions and sauté for approximately 5 minutes until translucent.
- Combine Gravy Ingredients: While onions cook, whisk together beef broth, arrowroot or potato starch, coconut aminos, garlic powder, salt, and pepper.
- Cook Gravy: Pour the broth mixture into the onions. Cook over medium heat, stirring regularly for 4-5 minutes until the gravy thickens.
- Serve: Place cooked meatballs in a serving dish and pour the hot gravy over them. Serve with mashed potatoes and steamed peas or green beans for a complete meal.
- Storage: Store any leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
Notes
- For a nut-free option, substitute almond flour with coconut flour or oat flour.
- For an egg-free variation, use a flax egg or chia seed mixture as a binder.
- Using a cookie scoop helps make uniform meatballs for even cooking.
- This recipe pairs excellently with creamy mashed potatoes and steamed vegetables like peas or green beans.
