Gravy

  • 1/4 medium yellow onion (thinly sliced)
  • 1 1/2 cup beef broth (or beef bone broth)
  • 1 1/2 tablespoon arrowroot or potato starch
  • 1 tablespoon coconut aminos
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat Oven or Air Fryer: If using the oven, set it to broil on high and prepare a rimmed baking sheet with foil and a rack. For air frying, preheat the air fryer to 375 degrees F.
  2. Mix Meatball Ingredients: In a medium bowl, combine ground meat, almond flour, egg, minced garlic, coconut aminos, dried minced onion, salt, and pepper. Mix gently to avoid overworking the meat.
  3. Shape Meatballs: Form the mixture into 20 equal 1-tablespoon meatballs, using a cookie scoop if desired to keep sizes consistent.
  4. Cook Meatballs (Oven): Place meatballs on prepared baking rack or foil-lined sheet spaced 1 inch apart. Broil for 10 minutes until browned, flip, then broil for another 3 minutes until cooked through.
  5. Cook Meatballs (Air Fryer): Arrange meatballs in a single layer inside the air fryer basket. Cook at 375°F for 8-10 minutes, working in batches if necessary, until browned and fully cooked.
  6. Prepare Gravy Base: Heat oil in a medium saucepan over medium heat. Add thinly sliced onions and sauté for approximately 5 minutes until translucent.
  7. Combine Gravy Ingredients: While onions cook, whisk together beef broth, arrowroot or potato starch, coconut aminos, garlic powder, salt, and pepper.
  8. Cook Gravy: Pour the broth mixture into the onions. Cook over medium heat, stirring regularly for 4-5 minutes until the gravy thickens.
  9. Serve: Place cooked meatballs in a serving dish and pour the hot gravy over them. Serve with mashed potatoes and steamed peas or green beans for a complete meal.
