  • 1 teaspoon grainy Dijon mustard
  • 1 teaspoon dried oregano

Instructions

  1. Prep and Toast Pine Nuts: Preheat the oven to 180°C (350°F). Spread pine nuts on a baking sheet and toast them in the oven for about 5-7 minutes until fragrant and lightly golden. Remove and set aside to cool.
  2. Make the Dressing: In a small bowl, whisk together olive oil, fresh lemon juice, Dijon mustard, dried oregano, salt, and black pepper until well combined and emulsified.
  3. Toss Salad Base: In a large salad bowl, toss the chopped romaine lettuce with the prepared dressing, ensuring all leaves are evenly coated.
  4. Add Main Ingredients: Gently fold in the cooked shrimp, diced avocado, halved cherry tomatoes, diced cucumber, and thinly sliced red onion to the dressed lettuce mixture.
  5. Finish and Serve: Sprinkle crumbled feta cheese and toasted pine nuts over the salad. For best flavor, chill in the refrigerator for about 1 hour before serving, or serve immediately.
