- 10 oz grape tomatoes (or cherry or regular-sized tomatoes)

- 1 onion

- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Wash and prepare greens: Wash any veggies that don’t come pre-washed. Add the spring mix to a medium-sized serving bowl.
- Prepare cucumber: Slice the ends off the English cucumber, then chop it into bite-sized pieces.
- Prepare tomatoes: Halve the grape tomatoes. If using larger tomatoes, slice them appropriately.
- Prepare onion: Chop off the ends of the onion, peel it, and then slice into thin rings or pieces.
- Combine vegetables: Add chopped cucumber, tomato halves or slices, and onion slices to the bowl with the spring mix.
- Make the dressing: In a small bowl or measuring cup, whisk together the balsamic vinegar and olive oil until well combined.
- Dress and season the salad: Drizzle the dressing over the salad, then sprinkle salt and pepper. Toss gently but thoroughly to coat all the vegetables evenly. Serve immediately.
