  • Author: Naomi
  • Total Time: 11 minutes
  • Yield: 12 bites 1x

Description

This delightful Strawberry Goat Cheese Bruschetta is a perfect appetizer combining the chewy texture of toasted baguette slices with creamy goat cheese, fresh arugula, juicy marinated strawberries, and aromatic basil. The strawberries are enhanced with a balsamic vinegar and honey marinade, adding a sweet and tangy flavor that complements the peppery arugula and earthy basil. Ready in just over 10 minutes, it’s an elegant, fresh, and easy-to-make starter for any occasion.

Ingredients

Scale

Strawberry Mixture

  • ½ pint strawberries, sliced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey

Bread

  • 12 slices baguette, cut ½ inch thick
  • Olive oil, for drizzling

Toppings

  • 1 (4 oz) log goat cheese, softened
  • 24 leaves arugula (2 per baguette slice)
  • Fresh basil, minced (amount to taste)

Instructions

  1. Prepare Strawberry Mixture: In a bowl, mix together the balsamic vinegar and honey until fully combined. Add the sliced strawberries to this mixture and stir gently to coat. Place the bowl in the refrigerator and let the strawberries marinate for about 10 minutes to absorb the flavors.
  2. Preheat Broiler: Preheat your oven’s broiler to 500 degrees Fahrenheit (or its highest setting) and let it heat for about 5 minutes to ensure even toasting.
  3. Toast Baguette: Arrange the baguette slices on a rimmed baking sheet in a single layer. Lightly drizzle each slice with olive oil to help them brown evenly and add flavor. Broil the slices for about 60 seconds, watching closely until they are lightly browned and slightly crispy. Remove and allow to cool slightly.
  4. Assemble Bruschetta: Spread a generous layer of softened goat cheese over each toasted baguette slice. Place two arugula leaves on top of the goat cheese on each slice.
  5. Add Strawberries and Basil: Spoon the marinated strawberries evenly over the arugula on each slice. Sprinkle freshly minced basil atop each bruschetta to finish.
  6. Serve: Serve the bruschetta immediately to enjoy the fresh, vibrant flavors and crisp textures.

Notes

  • This recipe uses about half of a standard baguette.
  • The recipe can be easily doubled to serve a larger group.
  • Leftover bruschetta is best eaten fresh but can be stored in the refrigerator for up to 3 days.
  • Watch the bread closely when broiling to prevent burning, as broilers vary in intensity.
