Scale
Frosting Ingredients
- ½ cup (1 stick / 113 g) unsalted butter, softened
- ½ teaspoon strawberry extract
- 1 pinch kosher salt
- 2 cups (250 g) confectioners’ sugar
- 1 jar (7.5 ounces) strawberry marshmallow creme (or fluff)
Instructions
- Beat butter until fluffy. In a large bowl, use a handheld mixer on medium speed to beat the softened butter until it becomes light and fluffy, which should take about 2 minutes.
- Mix in strawberry extract and salt. Add the strawberry extract and a pinch of kosher salt to the butter, mixing until fully incorporated.
- Add confectioners’ sugar gradually. Incorporate the confectioners’ sugar a half cup at a time, mixing well after each addition to ensure smoothness.
- Beat the mixture on high. Once all the sugar has been added, increase the mixer speed to high and whip for 2-3 minutes until the frosting is smooth and fluffy.
- Fold in strawberry marshmallow creme. Using a spatula, gently fold in the strawberry marshmallow creme until fully combined and airy, maintaining the fluffy texture.
Notes
- For a stronger strawberry flavor, you can increase the strawberry extract slightly, but be cautious not to overpower the frosting.
- Ensure the butter is completely softened at room temperature to avoid lumps in the frosting.
- This frosting is best used immediately, but can be stored in an airtight container in the refrigerator for up to 3 days. Rewhip lightly before use.
- Use this frosting to enhance vanilla, chocolate, or berry-flavored cakes and cupcakes for a delightful twist.
