- 1 cup sliced strawberries
Syrup
- 1/4 cup brown sugar
- 3 teaspoons cornstarch
- 1/3 cup water
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- Prepare Topping: Mix the oats, brown sugar, flour, cinnamon, and melted butter just until the mixture becomes crumbly. Spread half of this topping mixture into the bottom of a greased 9×9 inch baking pan to form a crust.
- Add Fruit: Evenly layer the peeled and sliced peaches along with the sliced strawberries over the prepared crust in the pan.
- Make Syrup: In a small saucepan over medium-high heat, combine the brown sugar, cornstarch, salt, and water. Cook while stirring constantly until the mixture thickens, which should only take a couple of minutes.
- Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract. Pour this syrup evenly over the fruit layer in the baking pan.
- Top with Remaining Topping: Sprinkle the remaining half of the oat topping mixture evenly over the fruit and syrup.
- Bake: Place the pan in a preheated oven at 350°F (175°C) and bake for 35 minutes, until the topping is golden and the fruit filling is bubbly.
- Optional Broil: For an extra crisp and browned topping, turn the oven to broil and place the pan on the top rack. Broil for 2-3 minutes, watching carefully to avoid burning.
