Description

Delight in these Strawberry Shortcake Truffles, a luscious bite-sized dessert combining Oreo crumbs, cream cheese, and strawberry shortcake crumbs, all dipped in smooth white chocolate and finished with a drizzle of red candy melts for a festive touch. Perfectly chilled, these truffles offer sweet, creamy, and fruity flavors in every bite.

Ingredients

Scale

Truffle Base

  • 1 package Golden Oreos (regular size, not family pack)
  • 4 ounces cream cheese (softened to room temperature)
  • 1 teaspoon lemon zest
  • 2/3 cup strawberry shortcake crumbs

Coating

  • 2 cups white chocolate chips
  • 2 teaspoons vegetable shortening (divided: 1 tsp + 1 tsp)
  • 1/2 cup red candy melts
  • 1/3 cup strawberry shortcake crumbs (for garnish)

Instructions

  1. Pulse Oreos: Place the Golden Oreos into a food processor and pulse until they become very fine crumbs, resembling a sandy texture.
  2. Blend with Cream Cheese: Add the softened cream cheese to the pulverized Oreos and pulse again until the mixture is thoroughly combined and smooth.
  3. Mix Batter: Transfer this mixture into a bowl, then stir in 2/3 cup of strawberry shortcake crumbs and 1 teaspoon lemon zest evenly. Cover the bowl and refrigerate for 30 minutes to 1 hour to firm up the batter.
  4. Roll Truffles: Once chilled, scoop out the mixture using a tablespoon or two-tablespoon scoop and roll into smooth, even balls with your hands.
  5. Chill Balls: Place the rolled truffles on a baking sheet lined with parchment paper and refrigerate for 1 hour to firm them up further.
  6. Melt White Chocolate: Combine white chocolate chips and 1 teaspoon vegetable shortening in a microwave-safe bowl. Microwave on medium heat for 30 seconds, stir, then microwave another 30 seconds. Continue to stir until chocolate is fully melted and smooth.
  7. Coat Truffles: Using forks or toothpicks, dip each truffle into the melted white chocolate, coating evenly. Let excess chocolate drip off and place coated truffles on waxed paper.
  8. Chill Coated Truffles: Refrigerate the coated truffles for 30 minutes to set the chocolate shell.
  9. Melt Red Candy Melts: In a separate bowl, melt red candy melts with the remaining 1 teaspoon vegetable shortening by microwaving for 30 seconds, stirring, and repeating until smooth.
  10. Drizzle and Garnish: Transfer melted red candy melts to a resealable bag, cut a small corner, and drizzle over the truffles. Immediately sprinkle with 1/3 cup strawberry shortcake crumbs to garnish.
  11. Final Chill: Chill the decorated truffles for an additional hour before serving to allow the drizzle to set completely.

Notes

  • Use room temperature cream cheese for easier blending and smoother texture.
  • Golden Oreos provide a light color and compliment the strawberry shortcake crumbs, but regular Oreos can be substituted if needed.
  • Refrigeration steps are crucial to keep the truffles firm and help chocolate coatings set properly.
  • The vegetable shortening thins the chocolate for a smoother, shinier coating and better dipping consistency.
  • Strawberry shortcake crumbs can be homemade or store-bought; they add a delightful texture and flavor when sprinkled on top.
