Description

The Vanilla Raspberry Iced Latte is a delightful chilled beverage that combines creamy vanilla, tart raspberry puree, and chilled coffee or espresso, creating a refreshing and visually appealing drink perfect for warm afternoons or year-round enjoyment. Easy to customize with dairy or plant-based milk and sweeteners, this latte offers a homemade café-quality experience with fewer calories and vibrant fruity flavors.

Ingredients

Scale

For the Latte

  • ½ cup milk of choice (dairy, almond, oat, etc.)
  • 2 shots espresso or ½ cup strong brewed coffee, cooled
  • 2 tablespoons raspberry puree (see recipe below)
  • 1 tablespoon vanilla syrup or ½ teaspoon vanilla extract plus sweetener to taste
  • Ice cubes
  • Optional toppings: whipped cream, fresh raspberries, crushed freeze-dried raspberries

For the Raspberry Puree

  • 1 cup fresh or frozen raspberries
  • 1 tablespoon sugar or maple syrup (adjust to taste)
  • 1 teaspoon lemon juice
  • 1 tablespoon water (optional, for thinning)

Instructions

  1. Prepare the Raspberry Puree: In a small saucepan over medium heat, combine raspberries, sugar or maple syrup, lemon juice, and optionally water to thin. Cook for 5–7 minutes until the berries break down into a sauce. Blend the mixture until smooth and strain through a fine mesh sieve to remove seeds if desired. Chill the puree before use.
  2. Brew and Chill Your Coffee: Brew 2 shots of espresso or ½ cup strong coffee using a French press, espresso machine, or stovetop moka pot. Allow the coffee to cool completely before assembling the drink.
  3. Assemble the Drink: In a tall glass, add 2 tablespoons of raspberry puree and 1 tablespoon of vanilla syrup. Fill the glass with ice cubes to the top.
  4. Pour the Milk: Add ½ cup of your milk of choice over the ice and give the mixture a gentle stir to blend the flavors.
  5. Add the Coffee: Slowly pour the chilled coffee over the milk and ice to create a layered visual effect.
  6. Garnish and Serve: Optionally top your latte with whipped cream, fresh raspberries, or crushed freeze-dried raspberries. Serve immediately and enjoy your refreshing Vanilla Raspberry Iced Latte.

Notes

  • Use chilled vanilla chai tea concentrate or steeped chai tea bags in place of coffee for a chai variation.
  • Add extra cinnamon or cardamom for a warm spice note.
  • Sweeten with honey or maple syrup instead of vanilla syrup for a natural sweetener option.
  • Ensure coffee is fully chilled before adding to prevent melting the ice and diluting the drink.
  • Strain raspberry puree to avoid unpleasant seeds in the latte.
  • Adjust sweetness gradually to maintain balanced flavors without overpowering vanilla or raspberry notes.
