Instructions
- Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2–3 minutes until the onion becomes translucent and fragrant.
- Add Remaining Vegetables: Stir in the sliced carrots and celery, cooking for another 5 minutes to start softening them. Then add the chopped bell pepper and diced zucchini, cooking for an additional 3–4 minutes to slightly tenderize all veggies.
- Add Broth and Seasonings: Pour in the diced tomatoes with their juice and the vegetable broth. Add the green beans along with dried thyme, dried basil, salt, and pepper. Stir well to combine all ingredients. Bring the mixture to a boil, then reduce the heat and let it simmer gently for about 15–20 minutes, or until all vegetables are tender.
- Add Greens and Serve: Stir in the fresh spinach or kale and cook for another 2–3 minutes until the greens have wilted. Taste and adjust seasoning if needed. Serve the soup hot, garnished with freshly chopped parsley if desired.
