Ingredients
Scale
Noodles
- 8 ounces noodles (egg noodles, rice noodles, or udon)
Protein
- 1 pound chicken breast, thinly sliced
Vegetables & Aromatics
- 2 tablespoons vegetable oil
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
Sauce
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tablespoon rice vinegar (or apple cider vinegar)
- 1 teaspoon sesame oil (optional)
Garnish
- Sesame seeds (optional)
- Green onions, sliced (optional)
Instructions
- Cook the Noodles: Boil the noodles according to the package instructions until al dente. Drain and set them aside to be combined later in the stir fry.
- Prepare the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast and stir-fry for 5 to 7 minutes until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
- Stir Fry the Vegetables: In the same skillet, add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant. Then, add the mixed vegetables and stir-fry for 3 to 4 minutes until they are tender but still crisp.
- Combine and Sauce: Return the cooked chicken to the skillet with the vegetables. In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil if using. Add the cooked noodles and the sauce to the skillet. Toss everything together carefully to combine well and heat through evenly.
- Serve: Plate the stir fry hot, garnished with sesame seeds and sliced green onions if desired. Enjoy your delicious Honey Soy Chicken Noodle Stir Fry!
