Instructions
- Combine ingredients: In a medium pot over medium heat, combine the strawberries and sugar. Stir occasionally until the mixture begins to simmer.
- Cook strawberries: Continue cooking for about 8 minutes, stirring frequently to help the strawberries break down slightly. Taste and adjust sweetness by adding more sugar if desired.
- Blend to puree: Remove the pot from heat and let the mixture cool for a few minutes. Then use an immersion blender to blend the strawberries until smooth, incorporating the optional lemon zest and lemon juice if using.
